Evening Stroll

Tonight I took my Scrappy out on a walk in the neighborhood.


Davey had to go deliver a check to one of his co-workers, so I took advantage of the time and decided to go on a nice little stroll with my doggy! <3

*Don't worry, Billy and Zoey got to go on a car ride with Daddy to help him deliver the check!

Scrappy and I took off and he was enjoying the nice cool air.

I guess I should say that he is taking ME for a walk! ;) We only did a short loop in the neighborhood since Davey said that I damn near killed him on our last walk.....which was only a mile and a half. To think, this poor little dude used to be able to RUN 3 miles with me....now 1.5 miles makes him foam at the lips......I guess that means I need to take him on more walks. Bad doggy mommy! :(

Scrappy and I headed off into the sunset together....

We passed by this lady jabbering away on her phone.....she was wearing a BodyBugg, so apparently she is trying to lose weight. Well, sorry to burst your bubble, but when you get passed by a 38lbs pug on a leisurely stroll, that BodyBugg and your walk aren't going to do much for you.

Sorry, mouth diarrhea....but some people just totally baffle me.

Anyway, after doing a lot of sniffing, Scrippits had to take a potty break.....

Yes, I am the dog mom who takes pictures of them while going to the bathroom.....at least it was #1! ;P

We finished up our walk and made it home! :)

Before I head off to bed, though, I do have a recipe I plan to share with you soon. It is not for those cupcakes I have teased you about, but something very delicious, I promise!!!

4th of July

How was everyone's 4th of July? Mine was great! Pretty relaxing, which is something I totally needed! :)

I made some cupcakes.....

Davey and I hung out at home and chilled until we decided, last minute, to head to a friend's house for a bbq. Our friend made some amazing ribs! Yum!!!! I love ribs!!!! :D I didn't get any pictures at the bbq....sorry for that.....but there were a lot of people I didn't know and didn't want to be that "weird" person taking random pix of people I don't know! LOL! It was a gorgeous day though!!!

Still too chilly for my liking, but the heat is coming up this weekend! :D


We left the bbq around 6:30 and came home. Davey immediately went and vegged on the couch while I got my breakfast and lunch ready for the next day. He then turned on Make It or Break It.....do any of you watch that show? We are so addicted! LOL!!!! Being a gymnast in my youth, I get sucked in to all the excitement! ;)

At 9pm, the fireworks started! We are lucky enough to be able to see them from our backyard. There is a sports park across the street from our housing tract and they set them off every year! The only downfall.....our neighborhood becomes a mad house for people parking and walking down to the park....


This picture doesn't do it justice, but if only you could see around every corner....it makes for great people watching though! ;)

Davey lit a fire in the fire pit for me since I was chilly....even with my sweatshirt and UGGs on! I am always cold....hence the fact that 75 degrees was too chilly for me today! I love having a fire pit in my backyard! Even on a warm night, it's still nice to light it up and sit around it! :)


The fireworks show lasted about 30 minutes. It wasn't one of the best I have seen, but it wasn't too bad either. As soon as it ended, we headed back inside and went straight to bed. A 4am wake up call was in my near future and I needed to get my beauty rest!

Cupcake Project Tease!

I baked my cupcakes for the Cupcake Project's Ultimate Chocolate Cupcake recipe today! I must say, they are mighty delicious!!!



Most of the ingredients required measuring out by weight.....

so I finally got to (appropriately) use my scale! Would you look at that! To the 1/100th of a gram....exactly 1 ounce! ;)

I got it all the ingredients mixed together and got ready to pop them in the oven.....

I baked them and let them cool before trying one.....

OMG!!!!! That is all I can tell you. These things don't need any frosting, although some peanut butter cream cheese....or even maybe a cherry frosting definitely wouldn't hurt! ;D

When I can, I will post the recipe, but until then, you'll just have to drool over these pictures!

Hope you're all having a great 4th of July! We are headed to a bbq at a friend's house and then going to come back home to watch some fireworks. We are lucky enough to be able to have a good view of them from our backyard!!!!

La Jolla Half Marathon

A half marathon was something I never thought I would ever accomplish. I used to hate running and doing the mile at school was like pulling teeth. I was one of those people that would walk the track and take 20 minutes to complete what some where finishing in less than 7 minutes!!!! I could never understand how someone could possibly want to go for a run.....I guess this was one of the reasons on why I got fat! :P

Fast forward quite a few years and bring us to 2010. I had finally attempted [and of course completed] my first [sprint] triathlon. I had a blast and couldn't wait to do my next one. During the "run" section, though, I power walked the whole 3.1 miles. Still, running was not for me. I was happy and content with not being a runner and was planning on continuing my life as a "non-runner".

One day that all changed....well, I guess it wasn't ONE day, but something finally clicked in my brain. I had gotten my treadmill to do my "walks" on cold wintery days, or when it rained (which in SoCal isn't very often, thankfully). I decided to give running an honest shot on that thing. Hell, isn't that what a treadmill is for.....to run on? It was a hard battle. I had to work hard to just run continuously for 5 minutes. Those 5 minutes didn't even get me to half a mile, but I was always so proud of myself that I could finally run for 5 minutes without stopping to walk. I kept adding more time until I was able to run 30 minutes without slowing the belt down.

Once spring time arrived, I took my running to the streets!!! It was so different than running on the treadmill, but thankfully my stamina that I had built up on the machine was able to push me through a run on the pavement. I started with 3 miles, then worked my way up until one day a friend of mine suggested I do the La Jolla Half Marathon with her!

My friend, Jaimee, was already signed up with another friend and it didn't take much to convince me to sign up as well. Hell, I won't be alone in this journey, so why not! I started upping my mileage until I was comfortable and confident that I could finish 13.1 miles, no problem!!!!

On April 29th, 2012, the hubby and I got up bright and early to set off to La Jolla. I put on my new Lululemon skirt, hot pink tank, and bright pink Nikes!

Once I was ready I grabbed my fave pre-race breakfast.....a blueberry bagel, Chobani yogurt, and my absolutely favorite drink, Click! If you haven't ever tried Click, I suggest you do. It's a coffee drink with protein in it.....gives you that high energy caffeine kick along with the necessary protein to fuel you for a great workout! 


I actually drank the Click on the way to the race, but washed my breakfast down with an orange Ultima electrolyte drink. Ultima is great! It is all natural and doesn't have any fake sweeteners (yuck). It has a light taste, so nothing strong. If you are into a strong flavored drink, then you may not care for Ultima too much, but give it a shot! You can buy it online or at your favorite health food store like Henry's/Sprouts, Baron's, etc.....

After eating I was ready to go......to the bathroom that is! ;P TMI, I know, but the worst thing to have happen to you during a race is having to go #2!!!! I made sure I was clear and ready to run! :D Davey and I hopped in the truck and he drove down to the Del Mar Fairgrounds where the race started. The start and finish are at different locations. The traffic was horrific and thankfully my awesome hubby knows his way around that neck of the woods and was able to get us there in no time and only hit traffic at the gate of the fairgrounds. We parked and walked up to the starting area. I, of course, had to pee (again, TMI, sorry) and stood in the long ass line for the port-potties. I finished with only about 5 minutes until starting time. Thankfully they had 2 start times. The first was for the really fast people and the second was for the average people. I am in no way a fast runner, so I waited for the second wave of people to go. The starts were only staggered by 5 minutes, so as soon as the first group was off I got into the huge crowd of people for the second wave. I kissed Davey good bye and told him I would call him when I finished (La Jolla is a crazy mad town with shitty parking and with the race going on it was going to be one hell of a nightmare getting around down there. So, being the "oh so wonderful" wife that I am....hehehe.....I told him he could wait at Del Mar and I would take the bus back to the start and meet him once I was done). I got my Garmin all ready to go as well as my Nike+ app, and waited for the gun to fire! The gun went off and so did I!!!!

The weather was perfect.....overcast, a bit chilly, but perfect. My friend, Lori has ran this race before and knew what I had coming ahead of me. She decided to meet me around mile 4 and run a bit with me just for fun! What a great friend!

She asked me how long it would take me to get in 4 miles and I told her around 35-40 minutes. She said no problem and that she would be on the lookout for me. At mile 6 was Torrey Pines.....a long hill that continues for 4 miles!!! I wasn't too nervous since I do hills all the time at home, but this was a race and I WAS worried that it would drain too much out of me and make the rest of the run hard. I tried to not think about that and just run.......I can do this!

Every song that came on my iPhone was perfect! The weather was great, and my legs felt amazing!!! I finally came up to mile 3 and realized that I had yet to stop to walk (a new thing for me!). I ended up making it to mile 4 sooner than expected. I don't know exactly how much time had passed since I forgot to charge my Garmin and it died shortly after the second mile! Dammit......oh well, I still had my trusty iPhone and Nike+ app! ;) 

At the end of mile 3, it started to go uphill a bit. We were in residential areas by that point and I looked up at the corner and saw Lori there!!!! Yay! I was so happy to see her!!!! We said hi, hugged, and then started running together. We made it to the beach half way through mile 5 and Torrey Pines was just in the very near future! I decided this would be a good time to eat a Gu gel and drink some Ultima and water that was available on the course.

After snapping a cute photo ;) we made the trek up TP! She pushed me and yelled at me like Jillian Michaels, but I am so glad that she was there to NOT let me stop! I eventually had to stop to walk a bit, but didn't slow down. With my walking, I was still passing people that were running! :D Around mile 8 Lori left me since she didn't want to have to do the climb again to get back to her car. I was still feeling great and was pumped to finish this thing! I stayed hydrated, taking a water and an Ultima at every water station. I seriously was feeling so great! No poo feelings, no full bladder, legs were behaving oh so very well, and the temps never got higher than probably 65! :D

When Lori left she parted me with some encouraging words......"just so you know, and don't freak out, but at the end there is another hill.....". Thanks for that friend......Thankfully I had already researched the course and knew that it was going to go uphill again before we finished......but hey, the finish line was downhill!!!! :D

I received a text right before mile 11. It was the hubby cheering me on. I didn't want to stop to write out "I am at mile 11" so I just quickly shot back with "11" in hopes that he knew what I meant. 2 more miles to go.....that is easy! I can do this! I was so excited thinking about how I only had 2 more miles!!!

The course went uphill, just like Lori had forewarned, but then it was downhill......I could see the finish line. Right as we started the dash to the finish, my left calf started cramping! WTF!?!?!?! Oh no, not now......that is NOT going to stop me! I made a mad dash to that finish line, crossed it, and then walked off the cramp!!!! All was back to great after I stopped running! :) I grabbed my medal, snapped a quick pic, sent some texts, and then called Davey to tell him I was done and that I was heading to the buses!

I was finally a half marathon finisher! Something I never fathomed of doing in my life......and now I am hooked! I was so excited that I had signed up for the Menifee Half Marathon at the same time as La Jolla and couldn't wait for those 3 weeks to pass to run my next one!!!!

June Foodie Pen Pals Reveal!

I started doing the Foodie Pen Pals in March and have continued, but during my absence from blogging, I have failed to update what I have gotten each month.

This month I received my package from Brooke who blogs over at The Well Nourished Traveler. She sent me some stuff that I had never tried before, and even something that I was scared to try at first (although I don't really know why, but just was). Brooke also has the same "fear" of seaweed as I do and was kind enough to NOT include any in my package! Thanks Brooke!!!!


In my package I received:

-Steel Cut Oats
-Organic pumpkin seed cheddar crackers
-Organic whole wheat spaghetti noodles
-Fig and Hazelnut spread (this is what I was afraid to try)
-Some dark chocolate
-A cute little note!

When I opened the package the first thing I dug into were those crackers! Yum!!!! I was so afraid to try the fig spread. Like I said, I have no idea why.....I LOVE fig stuff, and hazelnuts......once I dug in, though, I couldn't stop! That stuff is so tasty. It has lemon zest in it and it shines through. Its very refreshing, not too sweet, and went so well with those crackers! I need to know where she got that stuff so I can go buy more! LOL!

I have always wanted to try steel cut oats since I eat oatmeal every morning for breakfast, but just haven't been able to break myself out of my normal cycle. Guess now I have NO excuse NOT to try them! I hear they are so much tastier than regular oatmeal.....maybe I am afraid I won't go back to cheap  oats! ;)

Pasta is not a big part of my diet (go ahead, send the hate my way). I will make something, though with these noodles.....hey, they ARE whole wheat! Maybe I will make some sketti to carb load before my next half!?!?! :D

As far as the chocolates go......you can't go wrong with chocolate! <3 Yum!!!!

Time is a flying'......

Ok, so I know, once again I have been totally MIA! Well, I am not really sorry about that. I have just been so busy that the last thing on my mind is to sit on my computer and blog. I am sorry that I have to say that, but it is the honest truth!

Lots of stuff has been going on in my life. Nothing bad (thank God), but just been keeping busy and enjoying the days.

My garden has been taking off and I am so excited to have finally harvested some yummy veggies from it. I got a couple tomatoes so far, a bunch of flat pod peas, and a cucumber!!!! I am not a fan of tomatoes, but the one I picked was actually not too bad. It was a little sweet, and although it didn't gross me out like most do, I still wouldn't sit down and eat it like an apple......My peas and cucumber were very delicious though!!! Can't wait to get more veggies from my little garden!

I have been doing a lot of running! I have completed 2 half marathons since the last time I posted!!! The La Jolla Half in April and the Menifee Half in May! These 2 runs were the complete opposite of each other. La Jolla was probably the best run I have ever had.......Menifee, was one of the worst! I will do a post about each one separately or else we would be here all day reading this one! ;) I have also been doing lots of runs in the mornings before work, as well as getting back in the pool and doing some yoga! My bike also has come out of retirement and I have been pedaling my way on that as well!

Baking has taken a slight back seat lately to all my other hobbies (mostly working out and actually working.....), but I am going to pull the "its summer time and my house gets too hot to run the oven" card! ;) In the summer I just don't feel like doing much baking. I have other things to do.....and also want to remain bikini ready! :P With that being said though, I did actually do a little baking this morning and let me just tell you that the end product was something so amazing that I just had to come on here and tell you all about it!!!!!!!!

Let me start by telling you that I made banana bread for the first time ever this morning! A lady at my old job used to always bring in the best banana bread I have ever had in my life! She refused to share the recipe since it was "Top Secret" by her husband.....hmmmm.....so I have always been too afraid to try to make my own in fear that it won't be as good as hers. Well last night as I was reading my emails I found a recipe from Julie for some healthy banana bread. I looked at the ingredients and realized that not only do I have a couple of very ripe bananas, but I also have all the other ingredients! This doesn't happen very often and I saw it as a sign that I should make this bread!

After breakfast I busted out the good ol' stand mixer and started putting it all together. It had to bake for quite some time, so I hopped in the shower while it was baking up! When I took it out of the oven I couldn't wait to dig in and try a piece. It was so good! I would have to say that if my old co-worker's banana bread is a 10, this is a 9.5!!!!!!!!  You can not even imagine how ecstatic I was when I realized that I had made this delicious treat and it was not a flop like I was always afraid of!!!! :D I highly advise that you go out and get all the ingredients and start making a loaf for yourself........NOW!!!!


Healthy Banana Bread
(as adapted, and slightly modified, from Peanut Butter Fingers)



INGREDIENTS:
1 cup whole wheat flour
1/2 cup flour
3/4 tsp baking soda
1/4 tsp salt
1/4 cup brown sugar
1/4 cup sugar
2 TBSP canola oil
1/2 cup unsweetened applesauce
1/4 cup Egg Beaters (or 1 large egg)
2 very ripe bananas, mashed
1/4 cup Chobani Champions Very Berry Greek yogurt (or non-fat plain Greek yogurt)
1/2 tsp vanilla (I accidentally spilled a little extra into the batter....ooops....but still was great)
1/2 tsp cinnamon (I used a heaping 1/2 tsp.....cuz too much cinnamon never made anything taste bad!)


DIRECTIONS:
-Preheat oven to 350 degrees

-Spray loaf pan with cooking spray

-Combine and sift together flours, baking soda, and salt and set aside

-Mix together the rest of the ingredients together until smooth. A few lumps from the banana are fine! :)

-Slowly mix flour mixture into wet mixture and mix until fully combined

-Pour into loaf pan and bake for 35-50 minutes (mine only took 35 minutes, but Julie states she baked hers for 50 minutes)

-Remove from oven and allow to cool

-Slice and enjoy your little piece of Heaven! :)
