Ok, so it's only been like over a year since I have done a post. Life has just gotten in the way of my once fond hobby of blogging. That whole story will get its own post.....eventually.
To get myself back into blogging, I decided to sign up for cookie recipe swap from White Lights on Wednesday.
I got paired with Janell from Mama Gets It Done. She sent me the most amazing chocolate cookie recipe! Janell calls them Fudge Ecstasies, and after making them, I know why!!! These cookies are crunchy on the outside, yet soft and melty gooey on the inside!!! It was no wonder that they were gone before I knew it when I took them to work!
Fudge Ecstasies
INGREDIENTS:
1 12oz. package semisweet chocolate chips
2oz. unsweetened chocolate, chopped
2 TBSP butter
2 eggs
2/3 cup sugar
1/4 cup all-purpose flour
1 tsp vanilla
1/4 tsp baking powder
1 cup chopped pecans or almonds
DIRECTIONS:
1) Preheat oven to 350 degrees F. Grease a cookie sheet and set aside. In a medium heavy saucepan, heat and stir 1 cup of chocolate chips, the unsweetened chocolate, and butter until melted. Remove from heat.
2) Add the eggs, sugar, flour, vanilla, and baking powder. Beat with a wooden spoon until combined, scraping the sides of pan. (Mixture will be thin). Stir in remaining 1 cup chocolate chips and nuts.
3) Drop dough by rounded teaspoons 2 inches apart onto the prepared cookie sheet. Bake for 8 to 10 minutes or until edges are firm and surfaces are dull and cracked.
4) Cool on cookie sheet for 2 minutes and then transfer to cooling rack.
These cookies were super easy and quick to make. This will be my new go-to recipe when I want a delicious chocolate cookie.....and the addition of different candy pieces is endless......
.....maybe next time I'll throw some peanut butter chips in....you know, for good measure! ;)
