Eggnog Cookies

It's beginning to smell a lot like Christmas!!!!

I went today to help my grandparents decorate their tree, and even brought over the presents I had to put under the tree. We I decided to skimp a little on the ornaments this year. Hey, that means less to have to put away after Christmas. Don't judge.

I guess I am just not as in the Christmas spirit as I should be this year. I have most of my shopping done already which is great compared to how I usually am at this time before Christmas......normally I am a "Christmas Eve shopper...."


Agh!!!!


Maybe it's because Christmas seemed to come sooooooo quickly this year......only a week left!


Well, whatever the reason, I needed to get into some Christmas spirit, STAT!!!!!

I came home and decided to make something that screams CHRISTMAS!!!!! Some eggnog cookies were in store for this baking adventure!

Yummy cookies spiked with eggnog and topped with some delicious eggnog icing!!! Can't go wrong with that now, can you!?!?!


Eggnog Cookies
(as adapted by Picky Palate)


INGREDIENTS:


2 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/4 cups sugar
3/4 cup SALTED butter, softened
1/2 cup eggnog
1 tsp vanilla
2 egg yolks

DIRECTIONS:
-Preheat oven to 300 degress

-In a medium bowl combine flour, baking powder, cinnamon, and nutmeg

-Mix well and set aside

-In the bowl of a stand mixer, cream together butter and sugar

-Add eggnog, vanilla, and egg yolks

-Beat at medium speed until smooth

-Slowly add in the dry ingredients and beat on slow speed until all is incorporated


-Drop by rounded spoonfuls onto prepared cookie sheet

-Bake for 20-23 minutes or until bottoms turn light brown

-Remove immediately and place on cooling rack

-Once cooled, ice cookies! :)

Eggnog Icing
(as adapted by Picky Palate)


INGREDIENTS:
3 cups powdered sugar
1/4 cup unsalted butter, softened
1/3 cup eggnog

DIRECTIONS:
-In bowl of stand mixer, beat powdered sugar and butter together until well blended



-Slowly beat in eggnog until desired consistency is reached!



-Ice cookies

-Sprinkle nutmeg on top of cookies, if you want to! ;)
Some times you feel like a nut(meg), sometimes you don't!

-Enjoy!!!


These cookies sure seemed to put me in the Christmas spirit after smelling my house while they were baking! :)



Ok, I cannot lie......still not in the Christmas spirit like I should be.....hopefully this following week will put me more in the spirit! Regardless, I am still looking forward to Christmas time with my family!!! <3
